Christmas-Cake

I wish you all a nice second Christmas Eve.

For Christmas I baked a christmas-cake - my first attempt to bake such a cake. It worked , though not perfect, but it worked. My family has very tasty and me too, although I do not like so such cakes. But I must say, you need time for it and therefore patience ;) It was worth it. The taste of chocolate and fruity jam and delicious cinnamon cream was delicious.

The price for the ingredients:ca. 8€ and the time for preparation and so on: ca. 2 hours

Ingredients:

For the cake base:

6 eggs
4 tbsp. of warm water
200g sugar
225g ground nuts
2tsp. of backing powder
100 of grated chocolate
110g flour

For the filling:

250g apricot jam
1 package of custard powder (vanilla)
450ml milk
2 tbsp. of sugar
250g butter
1 tbsp. of cinnamon

For the decoration:

1 marzipan cover or chocolate glazing

For the cake base you have beat eggs, sugar and hot water until frothy. Fold in nuts, flour, baking powder and chocolate chips. Put the dough into a springform pan (24-26) and bake in preheated oven at 190 ° C (about 35 minutes). Leave to cool the cake and cut twice.

Baked Apple

Hey everybody!

Yesterday I made a pre-Christmas meal for my family. There were chicken legs with potatoes and red cabbage. As dessert we had a delicious baked apple and this I want to show you today.
This recipe is very easy to make and tastes delicious. A warm apple with delicious marzipan filling (I love marzipan ). In the marzipan are delicious chopped almonds. With a custard and actually even a scoop of vanilla ice – but we had none at home :(

For this recipe you need circa 35minutes. It costs about 5€.

 Ingredients (4 apples):

100g marzipan
3tbsp. of chopped almonds
4 apples (e.g. Boskoop)
4tbsp.of lemon juice
130ml apple juice
1 package of custard powder
2tbsp. of sugar
250ml milk

if you want: raisins (but I don't like them much)

1.

Cut the into four pieces and mix with the almonds. Then shape into small rolls. Cut out the cores of the apples and put the marzipan roles into. Place the apples in a baking dish and sprinkle with lemon- and apple juice. Then the apples have to roast in the oven (200° for 25 minutes).

2.

Then mix the sauce powder with sugar and three tablespoons of milk. Boil the remaining milk and add the sauce powder to the milk and boil while stirring. Put the sauce over the baked apples and ready is the delicious dessert.

What is your typical Christmas dessert?

Christmas-Cupcakes

Hello bakingfriends!

Christmas is almost here, so I want to show you today christmas-cupcakes. I've decorated with little Santas and snowflakes. They also taste delicious , because the cream is already in the cupcake.
Unfortunately I did not have enough cream, next time I should do something more or make not so big holes.
But otherwise they taste like white chocolate with fluffy dough.

You need about 20 minutes for the preparation and 25 minutes for baking. The ingredients cost circa 5,50. (Depending on what you have at home)

Ingredients (for 6 cupcakes):

For the cupcakes:

2 eggs
80g sugar
80g butter
80g flour
1 small package of baking powder
½ vanilla pod

For the cream:

200g white chocolate
6tbsp. of whipping cream
sugar pearls

1.

First you need to preheat oven to 180 ° C, then place the paper cases in the muffin tin. Next, whisk the eggs and sugar up. You get a white, creamy mass.

2.

Bring the butter to melt. Mix the flour with the baking powder and give both gradually to the cream. You have to open the vanilla pod, and scrape out the pulp and add to the dough. Then you have to mix everything well and spread the dough on the paper cases. The dough have to bake for 20 minutes.

3.

The cupcakes have to cool down on a rack. If they are not so hot, you have to undermine a little bit with a knife.

4.

For the cream you need to cut the white chocolate into small pieces and melt in the microwave and mix it well. Whip the cream. Give the melted chocolate to the cream and whip it.

5.

Pour the cream with a pastry bag into the cupcakes and extend the upward spiral. Then comes the fun part : decorating :)

Spitzbuben

I wish you all a nice third Advent.

Christmas time is family time, so I diligently baked with my mom and my sister this weekend cookies. A variety of these were the “Spitzbuben“ which are super tasty, but unfortunately a little bit complicated. They taste of hazelnut and are delicious with currant jelly.

For these cookies (20 pieces) you need about 20 minutes. You have to let the dough rest for 30 minutes. All in all you need 50 minutes. The price for this recipe is about 4,50€.

Most of my recipes I do with this maker. It is a little older-about 8 years, but it makes it much easier. It is from Aldi and has cost at that time about 90 €.

Ingredients:

420g flour
210g sugar
250g butter
125g hazelnuts (grated)
1 glass of currant jelly

if you want: powdered sugar

1.

The first thing you gonna do, is to sift the flour. Next you have to mix the flour with sugar, butter and hazelnuts. After that you put the dough into the fridge. The dough has to rest for 30 minutes.

2.

The next step is, you have to roll out dough (1-2 cm thick) and cut out small round cookies. I do it with this rotary cutter (4-5€, sometimes at Lidl).

3.

Then you put the cookies into the oven, for 15 minutes (170°-preheated). Mop the ground with currant jelly and put the cookie with the star on it.
Last step: dust with the powdered sugar.

Do you like cookies with hazelnuts or currant jelly?

Cinnamonroll-Cake

Hey guys,

today I want to show you a cake which I baked for the first time. He is with cinnamon rolls, and I love these „Ohrfeigen“ with cinnamon. But to be honest, I thought it will be more delicious. It is less sweet, but I like it. But what bothers me is that I can taste the cinnamon, not as good as the „Ohrfeigen“ - the next time I put more cinnamon onto.

All in all it is an delicious cake and in my opinion it is easy to bake.

You need about 15 minutes for the preparation and one hour to let the dough rise. The recipe costs circa 4,50€.

Ingredients:

For the dough

1 yeast
120ml water (lukewarn)
120ml milk (lukewarm)
60g margarine
60g sugar
1 egg
1 tsp. of salt
480g flour

For the filling

2 tsp. of cinnamon
40g sugar
as needed butter (melted)

For the icing

120g icing sugar
1 small package of vanilla sugar
1 tbsp. of milk

1.

First you do the dough. You mix all the ingredients for the dough (it should be easy to take it out). Next you let the dough prove.

2.

The next step is doing the filling. After you've let the dough prove, you roll it out (ca. 76x46 cm). Then you have to grease the dough and drege it with the sugar and the cinnamon.

After that you furl the dough on the longer side and cut the roll into 4cm pieces. These you put into a springform pan and put it in the oven for 25-30 minutes (175°C).

3.

The last step is, you have to put the icing (icing sugar with vanilla sugar and milk) onto the hot cake.

Do you have another recipes with cinnamon which you prefer?

Stutenkerle or Weckmänner

Hi bakingfriends!

Right for St. Nikolaus I thought to myself, I do Stutenkerle. These are easy because they ware with curd and not with yeast.
I did it for my family and they were really excited , they have said that they are really tasty. They are soft and easy taste of lemon.

For the preparation, it takes approximately 20 minutes and 15 minutes for baking. The ingredients cost about 2.80 € (depending on what you have at home).

Since I am not an artist, they look not so good – sorry for that ;)!

Ingredients (4 Pieces):

330g curd
13 tbsp. of milk
13 tbsp. of oil
8 tbsp. of sugar
2,5 small packages of vanilla-sugar
a pinch of salt
a little bit of lemon-flavour
633g flour
2 small packages of baking powder
some raisins for decorating
milk for spreading

1.

Mix the cud with milk, oil, sugar, vanilla-sugar, salt and lemon-flavour. After that  you mix the flour with the baking powder and stir it in. Then you knead the dough - it shouldn't stick no longer.

2.

Next you quarter them and turn it into roles (25cm). You mould them into ovals and shape the hands and legs. Then you shape the face and the body with the raisins. Put them on a baking plate ( 1 for 2) and dab them with milk.

3.

Put the "Stutenkerle" into the oven for 15 minutes (200°C). After that let them dry for 10 minutes.

Hi guys,

this week I will do chocolate-muffins with a little surprise.
They are realy yummy, I mean chocolate is always mhhmmm but with this surprise they are exceptional. I love muffins or cupcakes because you can bring it to every party or you can take it to a visit – they are like a snack ;)

For this recipe you need about 15 minutes and it costs circa 5,50€ (depending on what you have at home).

Ingredients (12 pieces):

200g flour
50g almonds
3 tsbp. of cocoa powder
3 tsp. of baking powder
2 eggs
100g sugar
80 ml oil
300g buttermilk
12 pices of Toffifee
100g chocolate coating

Grease the muffin mold very well, otherwise the Toffifee stick down very slightly.

But my tip: Take a paper case ;)

1.

Mix the eggs with the sugar, the oil and the buttermilk. After that you stir the flour, the almonds, cocoa powder and the baking powder in. Next you put the batter in the paper cases and press one Toffifee in the batter. (The batter is very fluid, do not be surprised, but then it is very fluffy.)

2.

Next you put the muffins for 20 minutes into the oven (160°C). Let it rest in the oven (for a short time) and remove immediately. When you are finished, you have to put the chocolate coating into the bain-marie.

Autumn-Cake (yummy and easy)

Hi!

Yesterday I baked a new cake I've never baked before. When I saw the ingredients, I didn't know, if this cake will be delicious or just OK – you know?!
But I thought to myself “Do not be shy and try it out!“ So I tried it: delicious!!!
It is one of the best cakes I've ever baked. It is with cinnamon and I love cinnamon in autumn/ winter. It smells of spices and they always reminds me of winter. It reminds me of a wonderful day in winter: it snows and you sit by the fireside and drink hot chocolate with whipped cream and cinnamon.
I called this cake the autumn-cake.
Also my family love this cake now – even my sister, normally she doesn't like cinnamon. But she says it was good.

The preparation needs only 15 minutes, but the cake have to bake about 90 minutes. The price for this cake is circa 4€.

Ingredients:

400g sugar
4 eggs
1 small package of vanilla sugar
350g flour
½ small package of paking powder
4 tsp. cinnamon
2 apples (peeled and diced)
0.5 glass of cherries
100g hazelnuts (wholly)

1.

First you have to whisk the sugar with the vanilla sugar and the four eggs up. Then you mix the flour with the baking powder and the cinnamon and fold it in.

2.

After that you peel the apples and cut them into cubes. The next step is, you have to drain the cherries. If you have done that, you can put the apples, the cherries and the hazelnut into the batter and fold it in.
Now the cake have to bake for 90 minutes (170°C) - my tip: Do aluminum foil after an hour on the cake, so it is not too dark.

This is it. ;)

Are you also enthusiastic like me? What is your best cake for this season?

Figs-Almond-Biscuit-Dessert

Hi everybody!

I have to tell you a story which was happend to me yesterday.
I was shopping with my mum and for this recipe I wanted to buy figs. So I went to the supermarket just thinking about my recipe and the ingredients. I went to the fruit-corner and saw apples, pears, bananas but no figs – shit! 'OK' I figuered, 'go to the next supermarket and figs will be there'. I went to the next shop and... Yes, you're right - no figs. So, I was in five supermarkets and there were no figs, just dried figs. I'm sorry about that, normally this recipe is with fresh figs. But I tasted it and it was okay, not so yummy when it is with fresh figs but okay.  ;)

For doing this recipe you need about 10 minutes but it is a little bit expensive because of the maple syrup but you can also use it for pancakes or yoghurt. Costs for this recipe: circa 8,50€.

Ingredients for 4 Person:

4 figs
300g mascarpone
200g natural yoghurt
3 tbsp. of marpe syrup
1 small package of vanilla sugar
130g almond biscuit

  1. First you have to wash and dry the figs (fresh figs). Next you cut 3 ½ of them into cubes. The last half you slice it into four. Sprinkle the figs with 2 tsbp. of the marple syrup and mix it.

  1. The next step is, you scramble the mascarpone, the vanilla sugar, the yoghrut with the rest of the marple syrup. After that you crack the almond biscuit.

     3.  The last step, you put the figs into four small bowls, next the mascarpone creme and after that the almond biscuit – there are on the top and a piece of the fig.

Bon appétit!

Autumn-Pizza

Hey everybody!

Today I've baked a new pizza. I baked it for the first time – I was not sure if it tastes nice, because it is an extraordinary pizza. But when I read the ingredient list, I was thinking that they would be great together.
The pizza called “Autumn-Pizza“ and I have to say that in my opinion it consits of ingredients which are not so typical for autumn but it smack of autumn – bizarrely.
It is an extraordinary recipe – an as I am, I set myself that task ;)

Then I ate it and yes, it was good. I took a bite of it and the batter was fluffy and the whole pizza was spicy but also a little bit sweet and creamy- all in one. But you have to try it yourself.

For this pizza you need about 15 minutes for preparation and for baking about 60 minutes. The ingredients cost about 4,50€.

Ingredients:

For the batter:

500g flour
1 cube of yeast
1 tsp. of honey
250 ml of water
2 tbsp. olive oil
0,5 tsp. of salt

For the topping:

100g sour cream
1 pear
1 twist of leek
50g salami (I use fowl, because I dont't eat pork)
200g camembert
salt
pepper
  1. For the batter you have to heat up the water, it has to be lukewarm. Then crumble the yeast and put it in the water, add the honey. After that you put the flour in a bowl and shape a trough. Next put the water with the yeast, the olive oil and the salt into the trough. The last step is, you have to knead it.

  1. After that draw a veil over the batter and let it prove for 35 minutes. My tip: Let it prove in the oven (50°C, over-and bottom heat). Then you can put the batter on a baking plate.

  1. The next step is, you have to put the sour cream on the patter. Peel the pear, quater it, core it and slit it. Then it has to bake for 15 minutes at 200°C -air circulation.

  1. Next remove it, cut the leek and put it on the pizza. Put the salami on it and cut the camembert, put it on the pizza, too. Season it with salt and pepper and put it in the oven. (10 minutes)
    Ready!

Honey Pops with Sunflower Seeds

Hi bakingfriends!

This week I will present you a really easy recipe but it is yummy and a good thing is, you can eat it everytime. You can use it as a dessert or when you are sitting on the couch for watching tv as a snack, the only bad thing is: it makes you thicker and thicker :)

I will do it because my family receive visitors – friends of my family. This yummy stuff is really profitable for such occasion. It is, as I said, really easy and you can make a lot of it.
You can put it into baking forms or you can leave it on a baking plate or on a plate – how ever you want ;)

My Mum loves it, while we were cooking for our visitors, she snacked on it.

You need more or less 20 minutes for doing it and it have to cool down for 1 hour.
This recipe costs you circa 5,30 €.

For this recipe you need:

375g Honey Pops (Cornflakes)
250g Butter
400g Durchbeißer (Caramel-Toffees)
250g Sunflower Seeds

1.

First you have to brown the sunflower seeds (without oil). Next you put them with the honey pops into a bowl and you dash them.

2.

The next step is, you melt the butter in a pot. After that you put the caramel-toffees to the butter. Now you have stir it until the toffees are creamy.
Done it? - All right- now you put the honey pops with the sunflower seeds into the pot, where the creamy caramel is waiting. Dash it.

3.

The last step is, you have to put this mass onto a baking plate and leave it to cool down.
Now it is your decision: Leave it on a baking plate or break it to pieces and put them into baking forms.

What about you? Do you like some easy stuff?
